½ cup butter (1 stick)
1 cup sugar
1 egg (beaten)
1 teaspoon almond extract
2 cups self-rising flour (Sift then measure)
Cream together butter & sugar; add the egg & extract. Mix well. (We use electric mixer) Add dry ingredients & blend well. Roll into balls by hand, place on cookie sheet, and press out with wet fork. Bake in hot 400 degree oven for 8 to 12 minutes. Do not over bake. When cool, run thin strips of frosting lengthwise through the center of each cookie.
1 cup confectioner’s sugar
2 Tablespoon coco
1 tablespoon hot water ½ teaspoon vanilla OR almond flavoring
For pink frosting, leave out coco; add red fold coloring & extra drops of water.

This recipe was the favorite of our son Andy Nichols born 4/9/1972 Andy died in a car crash 6/28/1988 when the car in which he was riding, was rear-ended by a drunk driver.
The recipe is easy to make and excellent for sharing with children to teach baking.
